2. Questions: We Have Your Answers Remember Paul? In a previous issue of Pizza News, Paul said: Can you ask your readers if they know of a good pizza tomatosauce recipe? Something delicate, yet flavorful? Vince answers: Hi Albert and Pizza News readers,
1 small can tomato paste, find a good one 6oz water 3 tablespoons parmesan cheese, grated 1 teaspoon garlic, minced 2 tablespoons honey 1 teaspoon anchovy paste, 1/4 teaspoon oregano 1/4 teaspoon basil leaf 1/4 teaspoon ground pepper 1/8 teaspoon cayenne pepper salt to taste Combine all ingredients and let sit for 30 minutes before using. Remember Jeff? In a previous issue of Pizza News, Jeff from Hamilton/Toronto, said: Can I blend corn meal with the flour salt sugar etc..if so how much would you suggest? What weight of dough +_equals large med small pizza? Eugene shares the following: Dear Albert, I use both cornmeal and semolina flour in my pizza crust recipes. In 1 1/2 cups of flour I substitute 3 tablespoons of semolina flour. For the cornmeal I usually substitute 2 tablespoons of cornmeal. It is very easy to add the tablespoons in the measuring cup first and then fill and rake with the flour and the substitution has been done.
