This cheesecake was made by my mom and was always a family favorite.
This recipe uses ricotta cheese and is fantastically delicious.


  • 4 eggs

  • 1 Cup of sugar

  • 1/8 teaspoon of salt

  • 1 Cup of Evaporated Milk

  • 3 Cups of ricotta cheese

  • Juice and rind of 1 lemon

  • 1/2 Cup of chopped nuts

  • Graham cracker pie shell

  • 4 Tablespoons of flour


  1. Beat eggs, add sugar and beat until light.

  2. Add salt, flour, milk cheese and lemon. Beat thoroughly.

  3. Pour into a Graham cracker shell.

  4. Sprinkle with nuts.

  5. Pre-heat oven to 350 degrees. Bake for 1 hour.

  6. Turn off heat and cool in oven.

Alternate Topping

  1. Drain 3/4 cup of liquid from canned fruit such as cherries.

  2. Combine liquid with 1/4 sugar and 1 Tablespoon of corn starch

  3. Boil 1 minute. Remove from heat. Add cherries.

  4. Pour over cheese cake when cool.
