Ingredients:
3/4 cup King Arthur whole wheat flour or equiv.
3/4 cup King Arthur Unbleached white flour or equiv.
1/2 teaspoon salt
1/8 teaspoon yeast
2/3 cup iced water
Directions
- Mix all ingredients in a Kitchenaid mixer until blended, (Recommend: KitchenAid KP26M1XNP Professional 600 Series 6-Quart Stand Mixer, Nickel Pearl
Stand Mixers)
- Knead mixture on floured board for a few minutes.
- Put in oiled bowl and cover with plastic wrap before putting in refrigerator for and 18 to 24 hour cold fermentation.
- Take out about one half hour before using.

Ingredients:
- Dough for one pizza
- Can of whole tomatoes blended in a food processor (Preferably Cento San Marzano Certified Tomatoes, 28-Ounce Cans (Pack of 12)
Tomatoes)
- 3/4 cup mozzarella Cheese
- 3/4 cup Romano Cheese
Directions:
- Stretch out dough
- Spread out mozzarella on dough
- Spread tomato mixture on top of cheese
- Top with 3/4 of Romano Cheese
- Bake in Pre-heated 500+ F. oven for 7-9 minutes (Preferably on Pizza Stone)
