Cooking pizza on the "kamado".

The kamado is a unique ceramic grill, which traces it's history to ancient times. The kamado design was based on a clay vessel from Japan, called a Mushikamado. Originally this charcoal fired cooker was used to cook rice. This ceramic cooker was round and had a dome which could be taken off the base.

Airline pilot Richard Johnson, who was based in Japan, decided to turn this rice cooker into a barbecue. He redesigned the kamado and patented it. He opened a factory in Japan and produced thousands of these ceramic grills. The kamado is now produced in the United States. Jaime insists the kamado is an incredible way to make pizza. Having a grill made of ceramic tile, I'm sure, makes a big difference in cooking pizza.

For the last several months, I have been making videos. I've made videos of restaurants, beaches, state fairs and museums. I have even filmed a video of my search for Dog the Bounty Hunter. 3. Dis an' Dat: A Useful Site, A Pizza Blog and from the Archives: Pizza in Peru

 

What made the pizza special was that it was baked in clay,wood fired ovens. Chez Magy also has a place in Agua Caliente, the villagebelow the Lost City of Machu Picchu.

Both places made a good pie and thelocal brew Cusqueno beer made an excellent
compliment to the pizza. The crusts were fresh, thin and crispy and the toppings were all fresh.

Although we did not check out other pizzerias, choosing to sample the
regional cuisine. We did look and they all used the wood fired, dome shaped clay ovens."

Thanks for the report, Espo. I wonder if those dome shaped clay ovens are at all related to the kamado and Mushikamado.

Hmmm...didn't Peru have a prime minister of Japanese descent?
